Paul Farag’s journey is defined by curiosity, culture and a drive to challenge the expected.
Starting his career in Sydney as an apprentice under Michael Moore, Paul quickly built a strong foundation across some of the country’s most respected kitchens. From whole-animal butchery at The Four in Hand to the precision of charcuterie at Monopole, and later refining his craft in seafood at Fish Butchery, each chapter added depth to his understanding of product, technique and discipline.
In 2020, Paul stepped into the role of Executive Chef at Nour, where he began exploring his Egyptian heritage and reimagining Middle Eastern cuisine through a modern lens. This evolution led to the creation of AALIA — a restaurant that pushed boundaries by drawing on ancient culinary traditions and elevating them for today’s dining landscape, earning critical acclaim and multiple industry awards.
With the launch of JOJI, Paul further expanded his creative reach, blending influences and showcasing his versatility as a chef.
Today, Paul stands at a new point in his career — focused on creating with intention, sharing knowledge and continuing to evolve his craft, driven by a desire to connect culture, history and food in a way that feels both relevant and real.
