Career Story
Josh Raine’s career is built on precision, discipline and a deep respect for produce, shaped across some of the world’s most demanding kitchens.
Originally from Oxfordshire, Josh trained in Michelin-starred restaurants throughout London before expanding his career internationally. A pivotal chapter came in Hong Kong, where, working with Shane Osborn, he began to see Asian influences shaping and evolving his classical French foundation.
His move to Australia saw him take on the role of Head Chef at Urbane in Brisbane, where he led the restaurant to three hats, cementing his reputation as a serious culinary talent.
In 2018, Josh stepped into the role of Executive Chef at Tetsuya's, one of Australia’s most iconic restaurants. Working alongside Tetsuya Wakuda, he led the kitchen for over five years, guiding the restaurant to global recognition, including a place in the World’s Top 500 (La Liste).
Today, Josh has stepped into his own chapter as chef-owner of 40Res in Surry Hills, a neighbourhood wine bar created with his partner Keliann Zellman. The venue reflects his evolution as a chef: thoughtful, produce-driven food designed to sit alongside great wine, delivered with a sense of ease and generosity.
From fine dining to a more relaxed, modern expression of hospitality, Josh’s journey is one of growth, refinement and staying true to the craft.
